This was our breakfast on Halloween morning. I adapted the buttermilk pancake mix to make these. They were really good.
1 c. white flour
1 ½ tsp. baking powder
½ tsp. baking soda
1 egg
2 Tbsp. white sugar
½ tsp. salt
1½ c. milk
1/3 to 1/2 c. canned pumpkin
1/2 to 1 tsp. pumpkin pie spice
MIX. Bake on hot, lightly greased griddle.
