I actually made gravy and it was good. It had a little too much sausage for me. I'm not used to it. My dad usually fried up sausage patties and then makes the gravy from the fat, rather than leaving it in the gravy. One of my favorite things to eat. I'm such a good southern girl.
1 lb. breakfast sausage
butter
3 Tbsp. flour
2 c. milk
1 tsp. salt
1/2 tsp. pepper
Cook sausage over medium heat, breaking it up with a wooden spoon. Transfer to a dish. Pour out all but 1/4 c. fat. If you have less than 1/4 c. fat, add butter to make up for it. Stir in flour and cook 2 minutes over medium low heat. Whisk in milk and cook until sauce begins to thicken, but do not boil. Stir in sausage and salt and pepper.
