This is from Barefoot Contessa and is so good.
3 Tbsp. plus 1 tsp. salt
1 lemon
2 lbs. large shrimp
1 c. mayo
1/2 tsp. dijon mustard
1 tbsp. white wine vinegar
black pepper
3 Tbsp. minced dill
1/2 c. chopped red onion
3 celery stalks, chopped
Salt a large pot of water and add lemon, cut into quarters. Bring to a boil and add shrimp. cook 3 minutes and remove to a bowl of cold water. Peel Shrimp. Mix together mayo, mustard, vinegar, 1 tsp. salt, pepper and dill. mix with shrimp. Add onion and celery and refrigerate for a few hours.
