I never watch Everyday Italian on the Food Network because I can't stand Giada's mouth. It drives me crazy. But her food seems to be pretty good. I checked out her cookbook from the library (reason #682 to hate Idaho Falls; their library needs more books). I tried this side dish and liked it, with only a few modifications. If you like spinach, and I do, then you should give it a try.
3 Tbsp. olive oil
1 red onion, sliced
2 cloves garlic, minced
1/4 c. chicken broth
1 Tbsp. soy sauce
1/4 tsp. salt
1/4 tsp. black pepper
2 (10 oz) bags, baby spinach
Heat oil and add onion and garlic. Cook about 8 minutes. Add broth, soy sauce, salt and pepper. Add 1/3 spinach and cook until it wilts. Keep adding spinach and sauteing until just before it wilts.
